Concord grapes from Warners Farm has a distinct candy-grape flavour, a flavour we bump up by cryo-concentration. Bay leaves have a woodsy aroma, like rosemary but leans towards old world notes with sappy undertones. Many of us use bay leaves in our stew, stocks, and sauces without really knowing the depth of flavour it adds! It's hard to describe why they work so well together; for us it's just magic in ice cream form.
