Later this year, White Rabbit will be taking Tang Zhong Milk Bread's place as an "Always" flavour. To give Tang Zhong Milk Bread a proper send off, we made this Pineapple Bun ice cream with the same bread yeast & buttermilk base and the addition of pineapple bun topping. Pineapple buns are one of Hong Kong's most iconic pastries. An actual pineapple bun has a fluffy milk bun base (made with the tang zhong method) and an egg washed cookie crust on top that cracks as it bakes. This makes the scored "pineapple" pattern that gives it its name! No actual pineapples are in the bun or this ice cream. We highly recommended it with Hong Kong Milk Tea for a Hong Kong diner breakfast combo!
