*Pork Dumplings: Fermented Cabbage & Szechuan Peppercorn

This pork dumpling is a take on a classic Northern Chinese style dumpling. Using housemade fermented cabbage (think kimchi but without the spices and not as sour) along with toasted Szechuan Peppercorns to give this dumpling a few layers of different flavours. We proudly use pork from pigs raised on a local regenerative farm (Arc Acres) which has that naturally sweet flavour of pasture-raised pork.
